A land where everyone has perfect vision. A land where cardiologists cannot find coronary heart disease? A land where there are no ulcers, appendicitis or degenerative disease? A land where there is no high blood pressure or high cholesterol? The Hunza people in the mountain passes of northwest Pakistan enjoy this utopian life. These people are so healthy that it is not uncommon to find men of 80 years repairing roads, lifting objects. They exercise in the winter by cutting holes in the ice covered streams and take a swim under the ice. The Hunzakuts secret lies in what they eat. Strange as it may sound, virtually everything the Hunzakuts eat is delectable to the palate and is readily available, at least, if your shopping horizons do not begin and end at the supermarket. Not only is the Hunza diet not exotic, but there's really nothing mysterious about its health-promoting qualities. This health is produced by a diet of fresh, natural unprocessed, and unadulterated food. The health and endurance of the Hunzakuts is credited as much to what they don't eat as to what they eat. First of all they don't take is 3300 calories, with 100 grams of protein, 157 grams of fat and 380 grams of carbohydrates. In contrast, studies by Pakistan doctors show that an adult Hunza consumes a little more than 1900 calories, with only 50 grams of protein, 36 grams of fat and 354 grams of carbohydrates. Both the protein and fat are largely of vegetable origin. This equates to just half the protein, one third the fat, but about the same amount of carbohydrates as we consume. The carbohydrates that the Hunzakuts eat is undefined or complex carbohydrates found in fruit, vegetables and grains, while we mainly consume them in the guise of nutrition-less white sugar and refined flour. The Hunzakuts eat NO processed food. Everything is fresh and unsalted. The only processing consist of drying some fresh fruits in the sun. They also make butter and cheese out of milk. No chemicals or fertilizers are used in the growing process. So, what do the Hunza people eat? The mainstay of their diet is apricots. They eat apricots fresh in season, and sun dry a great more for consumption throughout the long winter. They puree the dried apricots and mix them with snow to make ice-cream. No sugar is needed. They cut the pits from the the fruits, remove the almond-like nuts and squeeze the oil out from the nuts. This oil is used for cooking. Every meal is served with fresh bread called chappati. The grain is kept intact, and is ground with water and excludes yeast. Chappatis can be made from wheat; barley and buckwheat of millet. Buckwheat, peas, broad beans, lucerne, turnips, lettuce, apricots with their seeds, cherries and cherry seeds, berries of various sorts and other fresh vegetables form the rest of their diet.
